
This Week’s Featured Wine: 2021 Cabernet Sauvignon from Tzuba Estate Winery
This week’s featured wine is the 2021 Cabernet Sauvignon from Tzuba Estate Winery, located in the Judean Hills. A robust and well-structured wine, it showcases rich tannins, intense flavors of red and black fruit, and subtle notes of coffee and tobacco — a result of aging for 12 months in French oak barrels.
The Judean Hills, nestled between the Mediterranean Sea and the city of Jerusalem, are known for their mineral-rich, well-drained soils. The region enjoys a classic Mediterranean climate — warm, dry summers and cold winters, with no rainfall during the growing season — offering ideal conditions for cultivating high-quality grapes.

Tzuba Winery was established in 2005, and its current winemaker, Paul Dobb, joined the team two years later. Originally from South Africa, Paul brings extensive knowledge and experience to his craft. Before stepping into the winery, he worked directly in Tzuba’s vineyards, gaining a deep understanding of the land and the vines. Paul’s guiding philosophy, “The wine will only taste as good as the quality of the grapes,” reflects his strong connection to the vineyard and underscores the importance of the winemaker’s involvement in every stage of the growing process.

Understanding the vineyard — its terroir and climate — and aligning the crop to the environment are critical elements of successful winemaking. At Tzuba, all wines are single-vineyard, meaning they are sourced from the same plots year after year, ensuring consistency and a true expression of the land in every bottle.
Tzuba Winery is part of the Mateh Yehuda Appellation and produces approximately 60,000 bottles annually. They are available in select wine shops in Israel and abroad. We picked up our bottle at the Joe Canals in Lawrenceville, NJ. It’s showing available online from kosherwine.com.
