About the Wine

Sauvignon Blanc is a green-skinned grape variety originating in France’s Loire Valley and Bordeaux, known for producing crisp, dry, high-acid white wines with distinctive herbal, citrus, and tropical characteristics. Its name comes from the French words sauvage (“wild”) and blanc (“white”), a nod to its early, untamed vines.

Today, Sauvignon Blanc is the 8th most widely planted grape in the world and the second most popular white wine in Israel, right behind Chardonnay. Loved for its bold acidity and unmistakable herbaceous profile, it remains one of the most food-friendly white wines around.

This particular Sauvignon Blanc from Tabor Winery is part of the ADAMA SeriesAdama meaning “Earth” in Hebrew—a premium, fruit-forward line known for quality and value. The grapes are grown in the limestone-rich soils of the Galilee, hand-harvested in the early morning to preserve freshness, then cold-fermented in stainless steel tanks. This winemaking approach protects delicate aromatics, enhances fresh fruit expression, and maintains vibrant acidity.

About the Winery

Tabor Winery was established in 1999 in Kfar Tabor, in Israel’s Lower Galilee, by four veteran grape-growing families. What began as a boutique winery has grown into one of Israel’s leading producers, now crafting approximately 2 million bottles annually. Today, the winery is largely owned by Coca-Cola Israel.

Tabor is widely recognized for its commitment to eco-friendly and sustainable practices and has earned certification from the Society for the Preservation of Nature.

One of its most celebrated initiatives is the “Barn Owl Project,” designed to eliminate the need for chemical rodenticides. Because Israel lacks traditional barns, Tabor installed nesting boxes throughout its vineyards to provide safe habitats for barn owls—natural predators of rodents. Each owl can hunt between 2,000 and 6,000 rodents per season, creating a balanced, chemical-free ecosystem.

The owl featured on the Adama Sauvignon Blanc label honors these hardworking birds and symbolizes the winery’s deep commitment to sustainability.


About the Winemaker

Or Nadbach, Tabor’s current Chief Winemaker, took over from longtime winemaker Aryeh Nesher. After earning his Bachelor’s degree from Hebrew University, Or traveled to California to study Viticulture at UC Davis, interning at several wineries before returning to Israel.

Known for his focus on ecological and sustainable winemaking, Or works closely with Head Viticulturist Michal Akerman to match grape varieties with Israel’s diverse soils and climates. Recently, Tabor introduced Artisanal, a new premium wine brand that showcases Or’s experience, craftsmanship, and passion for winemaking.
