Originating from 17th-century Bordeaux, France, it’s a natural crossing between Cabernet Franc and Sauvignon Blanc. This Darom Cabernet Sauvignon is made from grapes grown in the Judea region at 2,500 feet above sea level. High-altitude vineyards enjoy more sunlight during the day and cool temperatures at night, slowing the ripening process. This enhances flavor compounds in the grape skins while preserving bright acidity.
Aged 8 months in oak, this wine is approachable yet complex, pairing beautifully with meat, lamb, chicken, and Mediterranean dishes such as roasted eggplant or spiced couscous.

Yatir Winery sits at the southernmost tip of the Judean Hills, bordering the Negev, at the foot of the Yatir Forest. Darom (“South”) highlights the winery’s location and embodies Israel’s first Prime Minister David Ben-Gurion’s vision of “making the desert bloom.”
Founded in 2000 as a joint venture between local vine growers and Carmel Winery, Yatir began as a boutique winery and now produces over 150,000 bottles annually.

Eran Goldwasser, Yatir’s winemaker, trained in Australia—a world leader in progressive winemaking techniques. After returning to Israel, he first worked at Carmel Winery before joining Yatir. He oversees both vineyards and winemaking, believing the best wines come from the best grapes—grapes that truly reflect their terroir.
