Chardonnay and Gewürztraminer make a fantastic blend. Combining the rich texture and citrus notes of Chardonnay with the intensely aromatic, spicy, and floral characteristics of Gewürztraminer creates a highly versatile wine that’s delicious with starter dishes, main courses, or even dessert.
Gewürztraminer wine is produced from the grape of the same name. Historically, its most famous sources have been Germany and the Alsace region of France, where the grape thrives in cool-climate conditions. However, it has also found success in places such as Oregon, New York’s Finger Lakes, Australia’s Tasmania, and of course — Israel’s Golan Heights and Upper Galilee.
In Israel, the grape grows particularly well in elevated, cooler regions. Smaller plantings can also be found in the Judean Hills, home to the vines of Psagot Winery.
Chardonnay is a perfect blending partner for Gewürztraminer because it provides structure and balance. While Gewürztraminer is highly aromatic and spicy, Chardonnay contributes bright acidity, a creamy texture, and softer fruit characteristics that help tame Gewürztraminer’s intensity. Chardonnay is Israel’s most widely planted white grape, with some of the finest examples coming from the Judean Hills, where high altitude, cool night breezes, and rocky soils create ideal growing conditions.

With Shavuot approaching, this wine feels especially meaningful. The name Sinai immediately brings to mind Mount Sinai 🏔️, where the Jewish people received the Torah — the central story of the holiday.
Shavuot is also traditionally celebrated with dairy foods 🧀, making this wine a perfect holiday pairing. Its fresh acidity and aromatic character work beautifully alongside cheesecake, blintzes, quiche, creamy pasta dishes, or a simple cheese board shared with family and friends.
Beyond the holiday connection, I love how balanced this wine is. The Gewürztraminer brings expressive floral and tropical notes 🌸🍑, while the Chardonnay keeps everything fresh, crisp, and elegant. It’s the kind of white wine that feels festive without being heavy — perfect for a warm spring evening or a Shavuot table filled with good food and conversation ✨🍷
🏔️ About the Winery

Psagot Winery is located in the Binyamin Region near Jerusalem. The property features a striking stone structure that houses the wine production facility, visitors center, and banquet hall. At its center is a peaceful garden overlooking the surrounding valleys and mountains.
Their vineyards are equally impressive, with views toward the Edom Mountains. At 960 meters above sea level, with limestone-rich soil, cool nights, and sunny days, the conditions are ideal for producing exceptional grapes and high-quality wines.
Psagot produces 25 different wines, which are exported around the world. Their wines are consistently recognized in international competitions, earning many prestigious awards and honors.
🍾 About the Winemaker

Psagot’s winemaker is Sam Soroka, who hails from Canada and still roots for his beloved Canadiens. He studied food science at McGill University and winemaking at the University of Adelaide in Australia. Before coming to Israel in the early 2000s, his experience included making wine in Australia, California, and France. He has worked for several Israeli wineries and even served as Chief Winemaker at Carmel Winery.
Sam’s winemaking skills are magical. He has elevated the quality of the wines at every winery fortunate enough to have him onboard, and Psagot is no exception.
He pays close attention to the vineyards, ensuring the grapes are harvested at precisely the right moment to produce the best possible wines. Sam believes deeply in Psagot’s vision — to create wines that symbolize the enduring spirit of both the people of Israel and its land.
