🍷 About the Wine

Traditional Provence Rosé is known for its pale pink color, bone-dry style, and crisp character. Delicate aromas of red berries, citrus, and herbs make it one of the world’s most food-friendly wines. Unlike sweeter blush wines, Provence Rosés are intentionally crafted to be dry and refreshing.

This style is typically produced from blends of Grenache, Cinsault, Syrah, and Mourvèdre. Its bright acidity and clean finish pair beautifully with Mediterranean salads, goat cheese, grilled fish, and chicken dishes.

The team at Matar Winery has done an exceptional job capturing the essence of a traditional Provence Rosé. The 2025 vintage is produced from 85% Grenache and 15% Counoise grapes grown in Israel’s Upper Galilee. After approximately 10 hours of skin contact, the grapes were gently pressed and fermented at cool temperatures to preserve their fresh-fruit character and delicate color. Following clarification and stabilization, the wine was bottled and released, ready to enjoy. Like most Provence-style Rosés, this wine is best consumed young, when its freshness and vibrant fruit are at their peak.

🏞️ About the Winery

Founded in the early 2000s by brothers Tal and Nir Pelter, Pelter Winery began as a small backyard project and has grown into one of Israel’s most respected wineries.

In 2005, the winery relocated to Kibbutz Ein Zivan in the Golan Heights, a region overlooking the Sea of Galilee and situated beneath Mount Hermon. The area’s high elevation, volcanic soils, warm days, and cool nights create ideal conditions for growing premium wine grapes. These unique terroir characteristics allow for slow ripening and excellent flavor development, producing wines with remarkable balance and structure.

Today, the Pelter brothers operate two wineries from the same location: Pelter, their non-kosher label, and Matar, their kosher label. While many Israeli wineries have transitioned from non-kosher to kosher production, Pelter’s decision to maintain two distinct wineries under one roof remains unique within the Israeli wine industry.

He studied oenology in Western Australia, where he was influenced by the local approach to winemaking and its culture of enjoyment.
